PRESS PLAY TO CREATE THE ATMOSPHERE
On those days where your bra feels like a strait jacket, your undies are too tight, and you just want to wear your softest, loosest clothes and fluffy socks, nothing helps like chocolate for breakfast.
I make a batch of these and freeze them in bite-sized pieces, so they are on hand whenever I need a quick fix.
Believe it or not, these are actually healthy-ish as I don’t use wheat flour or sugar.
Starting with a base of dates, walnuts, cacao nibs, cacao powder, chopped dark 70%+ or dark chocolate baking bits, I add a vague mix of pumpkin seeds, linseeds, chia seed, other ground nut, finely diced mixed fruit or frozen raspberries, coconut oil, butter or ghee, sometimes buckwheat flour, baking powder and eggs, give or take any of these depending on supply.
These are all about the chocolate and not sweet in the traditional sense so if you want to take the edge off just add some honey.
Whip it all up in the food processor, press into a brownie tin and bake.
When cool, cut into whatever size pieces you prefer, freeze on a tray separately then put into airtight containers to store in the freezer.
IN AN EMERGENCY
A really fast version is to get your food processor out, chop the dates first, add walnuts (or preferred nuts), some frozen raspberries, then sufficient coconut oil or butter or ghee to make it stick together.
Roll into balls and freeze what is left after you have eaten your fill. 😉
